Rich Pecan Pie and Delectable 
Pumpkin Chocolate Cookies

At Hotel Valley Ho’s ZuZu, diners return time and time again during the holidays for the signature ZuZu’s Pecan Pie with Vanilla Ice Cream. To create this decadent dessert at home, check out the following recipe.

ZuZu’s Pecan Pie with Vanilla Ice Cream

Yield: One 10-inch pie

ZuZu Pie Shell:

1 cup all purpose flour

1 T sugar

1/4 tsp. salt

5 T cold unsalted butter, cut into cubes

1/3 cup cold heavy cream


Heat oven to 400 degrees.

Place all dry ingredients in a mixing bowl and stir together. Cut butter in using a pastry blender or two forks until the pieces of butter are the size of blueberries. Add cream and stir with a fork until incorporated. Form dough into a 4-inch flattened ball, wrap in plastic wrap and refrigerate at least one hour.

On a lightly floured surface, roll the dough into a 14-inch circle about 1/4-inch thick. Lightly butter a 10-inch pie pan and dust with flour.

Carefully transfer the dough to the pan. Press the dough into the sides of the pan, then press the top of the rim of dough into the edge of the pan so it extends slightly above the rim. Pinch the dough every 1/2-inch to give it a fluted effect.

Line shell with parchment paper and fill with pie weights. Pre-bake until lightly browned, approximately 15 minutes in a 400-degree oven. Cool to room temperature and remove pie weights.


3 eggs

1 cup brown sugar

3/4 cup light corn syrup

6 T unsalted butter, melted

2 T bourbon

1 tsp vanilla extract

1/4 tsp Kosher salt

2 cups pecan, halved

Best quality vanilla ice cream


Heat oven to 350 degrees.

In a medium mixing bowl, beat eggs. Stir in brown sugar, corn syrup, melted butter, bourbon, vanilla extract and salt.

Place pecans in the pre-baked shell. Pour filling carefully over the pecans, ensuring they are evenly distributed. Bake at 350 degrees for 50-55 minutes until filling is just set. Allow to cool.

Cut into 8 or 10 slices and serve with vanilla ice cream.
