T. Cook’s New Summer Menu

Summer is the season for light and fresh cuisine, and executive chef Todd Allison’s Mediterranean fare on T. Cook’s summer menu delivers the perfect balance of flavors with a healthy twist.

“Spring and summer are one of the best growing seasons in Arizona with so many delicious herbs and vegetables from fresh chickpeas and morel mushrooms to green garlic and fava beans, which are only in season through August,” Allison says. “For this year’s menu, I really wanted these fresh flavors to take center stage and I tried to incorporate different ways to present them on the plate. We’re even making our own bone broth by combining lamb, veal and chicken bones with our house-made mushroom stock. It’s great for your immune system and adds the perfect balance to sweet and salty dishes.”

Be sure to consider a few of Allison’s favorites: the pan-roasted Alaskan halibut, Colorado lamb rack or the cacio e pepe.

Located at Royal Palms Resort and Spa, T. Cook’s culinary philosophy of magnifying the purity of fresh, seasonal ingredients is a celebration of its treasured heritage and offers a captivating environment in every sense with stone fireplaces, alfresco dining and unique design elements. TCooksPhoenix.com

In partnership with the Arizona Diamondbacks, Southwest Autism Research & Resource Center (SARRC) unveiled its new Arizona Diamondbacks Employment Hub on May 1. The new space provides a work space for individuals with autism to search for jobs within the community, practice interview skills and work with SARRC staff. According to a 2015 National Autism Indicators Report, only 32 percent of adults with autism had a job for pay outside of the home within the first two years after leaving high school. And national statistics indicate that anywhere between 80-90 percent of adults with autism may be underemployed or unemployed. The employment center was made possible with a $100,000 Ken Kendrick Grand Slam Award from the Arizona Diamondbacks Foundation. AutismCenter.org
